At the heart of Acquario is Executive Chef and Co-Owner Ferdinand “Fredi” Plaku. Hailing from the enchanting city of Venice, Chef Fredi’s culinary journey began as a humble kitchen line cook, funding his way through culinary school. His natural talent and deep passion for food led him through the kitchens of Sicily before he opened his first restaurant, also called Acquario, in Venice.

Chef Fredi’s pursuit of new horizons brought him to the United States, where he became an integral part of the culinary scenes in Connecticut and New York. Now, alongside his partner Emin “Nino” Rata, Chef Fredi brings his expertise to Acquario in Keller, Texas. Nino, a seasoned restaurateur with over 20 years of experience in New York's vibrant Italian dining scene, most recently from White Plains, offers a vision of cozy, welcoming spaces where every guest feels like part of the family. His restaurants, with their neighborhood charm, have always captured the hearts of locals, and Acquario is no exception.

Together, they combine experience and passion to offer a dining experience that marries the authenticity of Italian flavors with the warm, vibrant hospitality of Texas.
